Veg Thai green curry Vegetarian
Thai Green Curry is a medium spicy curry that can be served with rice or noodles. You can also enjoy it like soup if you prefer more gravy in the curry. This Vegetarian curry has all the goodness of vegetables and coconut that is healthy and filling.
Vegetable curries often considered boring by my kid. I really had a tough time feeding him the right nutrition because he hates having any nutritious food like vegetables, fruits, or even milk. I tried many ways to make different recipes with vegetables that will taste yummy so that my kid loves it and willing to eat it. Most of the time I was successful but the best recipe that I came across was this one.
On one of my trips abroad, I came across this wonderful Thai green curry recipe. And, ever since my life changed. Thai food is known to be medium spicy so I am not at all worried because everyone including kids can have it. the fact that the curry is homemade is also an advantage because can add vegetables as per my choice or whatever is there in my refrigerator.

This medium spicy curry made with Thai green masala which consists of vegetables and coconut milk. So all-natural ingredients are here that have high nutritional value. The curry can be easily made at home without any long list of groceries. Since it is completely vegetarian it can be enjoyed by everyone.
This Thai green curry can be served with bread, rice, or noodles. You can also make it as a soup if the gravy is made in lighter consistency and more quantity. The curry is perfect for lunch or dinner and it is filling also.

Step by Step photo guide of how to make Veg Thai green curry Vegetarian
1. Set a pan on medium heat and add oil to it.
2. Now add lemon grass to the hot oil and sauté for some time.
3. When the lemongrass turns tender add Thai green paste. Cook for 2 to 3 minutes
4. As the paste is cooked add coconut milk and keep stirring
5. Then add vegetable broth and stir again to cook everything well.
6. After boiling for a minute add the chopped vegetables to it and mix it well.
7. Let the curry simmer for some time to cook properly.
8. Now add chopped spinach to the curry and stir it well.
9. When the vegetables and spinach are almost cooked, add soya sauce, brown sugar, lemon juice, and some salt.
10. Stir it well and simmer it for 1 minute.
11.Your Thai green curry is ready to be served.
Thai Green Curry recipe card
Ingredients
- 2 tbs Oil
- 2 Lemongrass 3-inch stick
- 8 leaves lemon leaves
- 5 tbs Thai green paste
- 1.5 cup Coconut milk
- 1 Cup Vegetable broth
- 2 cup Mix Vegetable Carrot, brinjal, baby corn, broccoli, snow pea, sweet pea
- 1/2 cup Spinach
- 2 tsp Brown sugar
- 1 tsp Soya sauce
- 2 tsp Lemon juice
- Salt as per taste
Instructions

- When the lemongrass turns tender add Thai green paste. Cook for 2 to 3 minutes
- As the paste is cooked add coconut milk and keep stirring
- Then add vegetable broth and stir again to cook everything well.
- After boiling for a minute add the chopped vegetables to it and mix it well.
- Let the curry simmer for some time to cook properly.
- Now add chopped spinach to the curry and stir it well.
- When the vegetables and spinach are almost cooked, add soya sauce, brown sugar, lemon juice, and some salt.
- Stir it well and simmer it for 1 minute. Your Thai green curry is ready to be served.
