Millet Idli Batter
Foxtail idli batter is a super healthy idli batter packed with lots of nutrition and fiber. Every week I make idli but from last few weeks we are trying to make millet idli without rice. Millet idli are gluten free super soft idli.
Foxtail millet idli batter is diabetic friendly idli batter and an easiest way to include millet in your diet. Making a perfect idli batter without rice is a biggest task but foxtail millet idli batter is perfect batter that get easily fermented and idli become super soft like rice idli batter.
INGREDIENT
For making foxtail idli batter i used only three ingredients i.e.
Foxtail Millet is main ingredient of idli batter this millet is most commonly used millet all over world. This tiny millet is very good for diabetic people to reduce blood sugar, also foxtail millet is rich in Vitamin B12 help for better skin and hair growth. Millet is good for heart and smooth nervous functioning.
Another common ingredient in every idli batter is Urad dal. Dal helps to fermentate batter also urad dal is rich source of iron.Urad dal helps to weight loss also good for digestion.
Next ingredient is Poha which is used in small amount.Poha helps to make idli soft and spongy. Flattened rice is also low in calorie also help to maintain blood sugar level and anemia deficiency.

Step By Step Photo Guide
In a bowl rinse foxtail millet two to three times.
Soak foxtail millet minimum five to six hours.
In another bowl rinse urad dal two to three times.
Soak urad dal minimum five to six hours.
After six hours, drain out extra water from foxtail millet.
Now, in blender jar take soaked foxtail millet and blend until smooth paste.
Pour foxtail millet paste in airtight container.
In blender jar take soaked urad dal and add poha.
Blend poha and urad dal until smooth paste form.
Pour urad dal paste in foxtail millet paste.
Mix nicely, if needed add water.
Close lid and keep container in warm place.
Rest batter at least 12 hours or overnight or until batter doubled in size.
After batter is nicely fermentate add salt and water mix well.
Foxtail millet batter is ready.
Idli Making-
Add salt and water mix well.
In a idli steamer pour water keep idli plate.
Grease plate with oil.
Scoop idli batter into plate.
Steam idli for 8-10 minutes or until toothpick comes clear.

- 1/4 Cup Poha
- Water as Required
- Salt
- Oil for brushing
Instructions

- In blender jar take soaked urad dal and add poha.
- Blend poha and urad dal until smooth paste form.
- Pour urad dal paste in foxtail millet paste.
- Mix nicely, if needed add water.
- Close lid and keep container in warm place.
- Rest batter at least 12 hours or overnight or until batter doubled in size.
- After batter is nicely fermentate add salt and water mix well.
- Foxtail millet batter is ready.
- Idli Making-
- In a idli steamer pour water keep idli plate.
- Grease plate with oil.
- Scoop idli batter into plate.
- Steam idli for 8-10 minutes or until toothpick comes clear.

Notes
- Store batter in refrigerator for 2-3 days.
- For making dosa add little water to batter.
- Serve idli with coconut chutney.
